Swiss Steak

This is family recipe handed down from my grandma who we called Mimi. It will always make me think of my mom's cooking and Sunday dinners at home with the family. It's an easy crockpot meal with a good variety of vegetables.
Servings 8 servings

Ingredients

  • 2 lbs round steak, tenderized
  • 1 cup white flour
  • 4 tbsp olive oil
  • 1 yellow onion
  • 4 stocks celery
  • 2 green peppers
  • 1 28 oz can diced tomatoes
  • 1 14.5 oz can beef broth
  • 2 tbsp Worcestershire sauce
  • 1/2 tsp salt
  • 1 tsp allspice
  • 1/2 tsp fresh ground black pepper
  • 1.5 cups white rice
  • 1 2 lb bag whole carrots
  • 3 large broccoli crowns

Instructions

  • Chop and sauté the yellow onion, celery, and green peppers in 1 tbsp of olive oil until fragrant.
  • Add the sautéed vegetables, tomatoes, beef broth, Worcestershire sauce, salt, allspice, and fresh ground black pepper to the crockpot and mix.
  • Cut the tenderized round steak into servings about the size of a sticky note. Dip meat in flour covering both sides and cook in 1 tbsp of olive oil just until browned on each side. I use a large pan and typically have to do this in 2 batches and use an additional 1 tbsp of olive oil for the second batch.
  • Add the browned meat to the crockpot and submerge it in the sauce. Cook on high for 5 hours.
  • In the last hour of cooking time, prepare the roasted carrots and broccoli. Peel the carrots and then cut each in half lengthwise and into about 3-inch segments. Prepare the broccoli by cutting the crowns into bite-sized pieces. I typically mix the carrots and broccoli each with about 1/2 tbsp olive oil and place on 2 separate baking sheets lined with silicone baking mats. Roast in the oven at 400 degrees F for about 35min or until desired tenderness.
  • After putting the vegetables in the oven, make the rice by rinsing and adding it to a rice cooker with 3 cups of water.
  • The meat, rice, and vegetables should all finish at about the same time and dinner is ready!

Notes

You can use anywhere between 1.5-2 lbs of round steak depending on how much meat you want in the sauce. When you buy it, take it to the counter at the meat department and ask them to tenderize it once.
