Healthier Sausage, Egg & Cheese Breakfast Sandwich

A healthier alternative to frozen Jimmy Dean breakfast sandwiches and McDonald's egg McMuffins using whole wheat English muffins and turkey sausage.

Ingredients
  

  • 1 lb tube ground turkey
  • 1 tbsp olive oil
  • 6 eggs
  • 6 whole wheat English muffins
  • 6 slices cheddar cheese
  • 6 slices of tomato (2 large vine tomatoes)
  • salt
  • freshly ground black pepper

Instructions
 

  • In order to prep the turkey sausage, cut into rounds about 1 cm in thickness (should make about 10 patties) and press to flatten out (I use the bottom of a measuring cup). Season each side of the patties with salt and pepper to taste. Heat 1 tbsp olive oil in a large frying pan and brown turkey sausage on both sides until cooked through completely. You may need to drain off some of the fat for the sausage to brown well. You could also opt to use frozen sausage patties and skip this step entirely.
  • If you are going to make just 1 serving at a time, whisk 1 egg with a little salt and pepper to taste. Spray a small frying pan well with nonstick spray and cook egg like an omelet. I like to flip it to cook both sides well.
  • Slice tomato. I like to use a large vine tomato for these sandwiches so that the slice is wide enough to cover the English muffin.
  • Toast the English muffin.
  • Assemble the breakfast sandwich by placing the egg on the bottom followed by a slice of cheddar cheese, a slice of tomato, and 1-2 turkey sausage patties. I fold the edges of the egg in like a galette crepe to make it fit on the English muffin. Enjoy!
