Non-Traditional Cobb Salad

Easy non-traditional cobb salad recipe using eggs as the protein source with a variety of colorful vegetables and chipotle ranch dressing to top it off.

Ingredients
  

  • 9 oz salad spring mix
  • 6 eggs
  • 3 avocados
  • shredded carrots
  • radishes
  • grape tomatoes
  • shredded cheddar cheese
  • French fried onions
  • Chipotle ranch dressing

Instructions
 

  • To make the hard-boiled eggs, fill a large pot with enough water to cover eggs completely. Add the eggs to the pot of water and bring to a boil on high heat. Once the water begins to boil, turn off the heat, cover the pot, and leave it on the hot burner for 11 minutes. Pull out the eggs and transfer them to an ice bath to cool.
  • Divide the salad mix into 6 equal servings.
  • Chop the grape tomatoes into circular rounds and the radishes into semicircles.
  • Top each salad with carrots, radishes, tomatoes, shredded cheddar cheese, French fried onions, half an avocado, and one of the hard-boiled eggs.
  • Drizzle chipotle ranch dressing over the top and enjoy!

Notes

If you're going to meal prep this recipe for lunches throughout the week, I like to add the salad greens, carrots, radishes, and shredded cheddar cheese to a meal prep container initially. Then, I wait to add the tomato, avocado, French fried onions, and hard-boiled egg until the day I plan to eat it just to keep the ingredients fresh.
